Grain Bill
- 10 lbs Great Western Two Row Malt
- 1 lb Briess Midnight Wheat
- 0.5 lbs Black Patent Malt
- 0.75 lbs Crystal 120
- 0.5 lbs Carapils

Hops
- 1 oz Chinook (60 min boil)
- 1 oz Mosaic (30 min boil)
- 2 oz Cascade (10 min boil)

Yeast
- White Labs California Ale WLP001
- Safeale 05
Instructions:

Mash
- Heat 5 gallons of water to 150°F (67°C).
- Add grains to your mash tun and hold at 152°F for 60 minutes.
- Sparge with 4 gallons of water heated to 170°F (77°C) to collect 6.5 gallons of wort.

Boil
- Bring the wort to a rolling boil.
- Add hops as indicated:
- 60 min: 1 oz Chinook
- 30 min: 1 oz Mosaic
- 10 min: 2 oz Cascade

Cool and Ferment
- Cool wort to 70°F (20°C) using a wort chiller or ice bath.
- Transfer wort to a sanitized fermenter and pitch the yeast.
- Ferment at 70°F for 1-2 weeks or until fermentation activity subsides.

Bottle or Keg
- Bottle your beer with 6oz priming sugar for carbonation or keg and force carbonate.
- Allow bottled beer to condition for 2-3 weeks.

Expect a robust, dark beer with smooth roasted malt flavors from Midnight Wheat and Black Patent, complemented by caramel sweetness from Crystal 120 and a creamy body from Carapils. The bold hop additions deliver piney, citrusy, and floral aromas, giving this stout a uniquely hoppy edge.
