Embrace the rich, malty flavors of Scotland with this robust Scottish Ale. The Kilted Warrior boasts a smooth, caramel sweetness with subtle hints of roasted malt, balanced by earthy Fuggle hops. It’s a timeless brew perfect for cooler nights or any occasion calling for a hearty ale.


What’s Inside:

Grain Bill:

  • 10 lbs Maris Otter
  • 0.5 lbs Crystal 80
  • 0.25 lbs Black Malt
  • 0.25 lbs Crystal 120

Hops:

  • 1.5 oz Fuggle (60 min boil)
  • 0.5 oz Fuggle (15 min boil)

Yeast:

  • Edinburgh Yeast (liquid) or Safeale S-04 (dry)

Instructions:

1. Mash

  • Heat 5 gallons of water to 160°F (71°C).
  • Add the grains to your mash tun, ensuring the temperature settles at 150°F (66°C). Hold for 60 minutes.
  • Sparge with 4 gallons of water heated to 170°F (77°C) to collect 6.5 gallons of wort.

2. Boil

  • Bring the wort to a vigorous boil for 75 minutes. Add hops as indicated:
    • 60 min: Add 1.5 oz Fuggle.
    • 15 min: Add 0.5 oz Fuggle.

3. Cool and Ferment

  • Cool the wort to 70°F (21°C) using a wort chiller or ice bath.
  • Transfer the wort to a sanitized fermenter and pitch your chosen yeast.
  • Ferment at 65-70°F (18-21°C) for 1-2 weeks, or until fermentation is complete.

4. Bottle or Keg

  • Bottle your beer with 6 oz of priming sugar for carbonation or keg and force carbonate.
  • Allow bottled beer to condition for 2-3 weeks before serving.
