Lalvin 71B is a yeast strain selected for its ability to produce high levels of esters, imparting fruity aromas to wines. It is also known for metabolizing up to 20–40% of malic acid during fermentation, which can soften the acidity of wines. This makes it particularly suitable for young, fresh, and fruity red, rosé, and white wines.
