Lalvin Bourgovin RC212 is a yeast strain isolated from the Burgundy region of France by the Bureau Interprofessionnel des Vins de Bourgogne (BIVB). It is specifically selected for fermenting Pinot Noir and other red grape varieties where color and tannin stability are crucial. RC212 promotes the extraction and stabilization of polyphenols, resulting in wines with enhanced color and structure. It consistently produces wines with good structure, ripe cherry, bright fruit, and spicy characteristics.
