Lalvin K1-V1116, also known as ICV K1, is a robust yeast strain selected by the Institut Coopératif du Vin (ICV) in Montpellier, France. It is renowned for its vigorous fermentation capabilities and high alcohol tolerance, making it suitable for a variety of wine styles, including aromatic whites, rosés, and late-harvest wines. K1-V1116 is noted for producing high levels of floral esters, such as isoamyl acetate, hexyl acetate, and phenyl ethyl acetate, which contribute to fresh, floral aromas in the finished wine.
