This rich and robust Old Ale features the nutty depth of Marris Otter malt, a touch of caramel sweetness from brown sugar, and a hint of oak-aged complexity. Perfect for cozy nights by the fire or special occasions, this ale is an ideal choice for homebrewers seeking bold flavors with a smooth finish.


What’s Inside

Grain Bill:

  • 12 lbs Marris Otter OR 8 Lbs Extract
  • 1 lb Crystal 60
  • 4 oz Special Roast
  • 4 oz Black Malt

Hops:

  • 2 oz Fuggles (60 min boil)
  • 1 oz Fuggles (10 min boil)

Yeast:

  • Safale 04

Extras:

  • 4 oz Oak chips (for aging complexity) 
  • Brown sugar (not included – 1 lb for brewing, 8 oz for bottling)

Instructions

1. Mash

  • Heat 5 gallons of water to 146°F (63°C).
  • Add the grains to your mash tun and hold at 146°F for 60 minutes, stirring frequently.
  • Sparge with 4 gallons of water heated to 170°F (77°C) to collect 6.5 gallons of wort.

2. Boil

  • Add 1 lb of brown sugar to the wort and bring to a vigorous boil for 60 minutes.
  • Follow the hop schedule as indicated:
    • 60 min: Add 2 oz Fuggles.
    • 10 min: Add 1 oz Fuggles.

3. Cool and Ferment

  • Cool the wort to 70°F (21°C) using a wort chiller or ice bath.
  • Transfer the wort to a sanitized fermenter and pitch the yeast. Add the oak chips at this stage.
  • Ferment at 70°F for 2 weeks or until fermentation is complete.

4. Bottle or Keg

  • For bottling, use 8 oz of brown sugar (not included) for priming to achieve a smooth, malty carbonation.
  • Bottle and condition for 2-3 weeks before serving, or keg and force carbonate for quicker enjoyment.

Tasting Notes:
